How Much Turkey Per Person, by Guest Count

The USDA says 1 pound of whole turkey per guest, or 1¼ pounds for a frozen pre-stuffed bird. A table from 8 to 24 guests, with the thawing days and roasting hours each size needs, and the pan that holds it.

This page turns the USDA’s per-person amounts into a turkey size for every table from 8 to 24 guests, with the thawing and roasting time each size needs, for Thanksgiving on Thursday 26 November 2026. The pans and thermometer are chosen as How we choose describes. Nothing here was handled or tested.

At a glance

1 pound per guest, because the weight includes the bones

The USDA’s figure for a whole turkey is 1 pound per person, fresh or frozen. That sounds generous, but the label weight includes the frame, the wings and the neck, so a 12-pound bird serves 12 at the table rather than feeding 12 twice. A frozen pre-stuffed turkey needs 1¼ pounds per person, and the USDA says to cook it straight from frozen, never thawed first.

Butterball’s online portion planner asks 4 things before it gives a weight: the number of adults, the number of children, whether you want leftovers, and whether your guests are big or light eaters. Those are the right questions, and the USDA’s pound a head is the answer for an average table.

The turkey size, thaw and roast time for 8 to 24 guests

Each row uses the USDA’s 1 pound a guest for an unstuffed whole bird, its fridge thawing time of about 1 day for every 4 to 5 pounds, and its roasting times for an unstuffed turkey.

Guests Turkey Days in the fridge to thaw Roasting, unstuffed
8 8 lb 1 to 3 days 2¾ to 3 hours
10 10 lb 1 to 3 days 2¾ to 3 hours
12 12 lb about 3 days 2¾ to 3 hours
14 14 lb 3 to 4 days 3 to 3¾ hours
16 16 lb 3 to 4 days 3¾ to 4¼ hours
18 18 lb 4 to 5 days 3¾ to 4¼ hours
20 20 lb 4 to 5 days 4¼ to 4½ hours
24 24 lb 5 to 6 days 4½ to 5 hours

These times are approximate, and the USDA’s rule is that a thermometer decides when the bird is done, not the clock. How long to thaw a turkey has the start date for each size.

Leftovers have a 3 to 4 day limit, so size up only a little

The USDA says to eat refrigerated turkey, stuffing and gravy within 3 to 4 days, or to freeze them and use them within 2 to 6 months. Food left out longer than 2 hours goes in the bin, or 1 hour above 90°F. So a bird bought for leftovers should be a few pounds bigger, not twice the size: the Friday sandwich is the goal, not a week of turkey.

Any size of bird is done at 165°F, in 3 places

A 10-pound turkey and a 24-pound one are both safe at 165°F, read in the innermost thigh, the innermost wing and the thickest part of the breast, per the USDA. A bigger bird only takes longer to get there. What temperature is turkey done has the full method.
